There is something about sweet and sour chicken where it really just cures everything. Serves 2 • 12 chicken nuggets • 1 onion, chopped • 1/2 red bell pepper, chopped • 5 tablespoons tomato ketchup • 250 ml fresh pineapple juice • 3 tablespoons sugar • 1 tablespoon rice wine vinegar • 2 tablespoons water • 1 level tablespoon cornstarch • 1/2 teaspoon sesame oil • 1 teaspoon light soy sauce Instructions: 1. Cook the chicken nuggets in the oven according to the package instructions and set aside. 2. Heat a little oil in a pan over medium heat. Add the onions and red pepper, cooking until softened. 3. Add the tomato ketchup, pineapple juice, sugar, rice wine vinegar, water, sesame oil, and soy sauce to the pan. Stir and bring the mixture to a gentle boil. 4. Mix the cornstarch with 2 tablespoons of water to make a slurry. Pour this into the pan, stirring until the sauce thickens. 5. Add the cooked chicken nuggets to the sauce, tossing them to coat evenly. Serve over rice and enjoy.
