EL BASHA W ASAKROH  A classic dish which originated from Damascus .  The BASHA is the Kebbi and the ASAKER are the shishbarak, symbolizing the chief and his army . Here’s my recipe ⬇️ serves 5-6  You’ll need  2 litres  @jalna_yoghurt  3 heaped tbs @whitewingsbaking corn flour  1 litre filtered room temperature water . 25 peices shishbarak 25 peices flash fried small Kebbi aras. (The recipe for shishbarak and Kebbi are in my reels )  6 freshly crushed garlic cloves  2 cup freshly chopped coriander (with stems)  Butter 100g  2 tsp salt  Method ⬇️  Flash fry or air fry (from frozen state) the Kebbi for few mins so they keep shape in the yoghurt , set aside on paper towel .  Add yoghurt to a large pot , dilute the corn flour with 1/4 cup of cup water and mix well  and add it to the yoghurt , add the 1 litre water .  Mix altogether well with a whisk  and then turn on the heat , keep stirring until the yoghurt bubbles and starts to boil . Takes about 10-15 mins .  Do not add any water to it if it’s too thick until AFTER it boils .  Add in the shishbarak let them simmer few mins , add in Kebbi and let them all cook together on a low/ medium heat for about 15-20 mins , then lowest heat and cover a simmer a further 15 mins or until cooked .  Add salt  In a seperate pan fry off  butter and add the garlic and coriander and cook off a few mins then add to the yoghurt .  You can definitely substitute the coriander with dry mint also .  Serve with emjadera (in my reels ) or vermicelli rice (in my reels )  Demos and videos are in my highlight also .
