Ingredients: •3/4 cup unsalted butter, melted •1 cup brown sugar, packed •1/4 cup granulated sugar •1 egg + 1 egg yolk, room temperature •1 Tbsp vanilla extract •1 3/4 cup all-purpose flour •3/4 tsp baking soda •3/4 tsp salt •1/2 a batch of my homemade Chocolate Ganache •48 mini marshmallows *This recipe makes 24 mini s’mores cups. Preheat oven to 350°F and spray a mini muffin pan with nonstick cooking spray. Make 1/2 a batch of my homemade Chocolate Ganache while you’re waiting for the oven to preheat. (ganache recipe is posted) This will give the ganache time to thicken a little before filling cookie cups later. In a large mixing bowl combine cooled melted butter, brown sugar, and white sugar. Stir until combined. Add in the egg, egg yolk, and vanilla extract. Mix until fully incorporated. Add the flour, baking soda, and salt. Stir until fully combined and no streaks of flour remain.  Scoop 1 tablespoon sized cookie dough balls and roll in between yours hands. Place dough balls in prepared muffin tin. Bake for 8-10 minutes or until edges turn golden.  Remove cookie cups from oven and press the centers down while they’re still soft to make a pocket for the ganache. Let the cookie cups cool completely before filling with homemade Chocolate Ganache. Fill the cups with about 1-2 tsp of ganache. Set your oven to a low broil. Top off each ganache filled cookie cup with 2 mini marshmallows. Now place the cookie cups back into the oven for about a minute to slightly brown and soften the marshmallows. Watch very closely or marshmallows will burn!
