TRAVEL IN MY KITCHEN: China 🇨🇳 Chicken Congee Chicken carcass (I just used skin, you don’t have to) 9c water 1c basmati or jasmine rice, washed 2tbsp chicken bouillon Knob of ginger, peeled and sliced 4 garlic cloves, minced 1 yellow onion, diced (or green onions) Black pepper, salt, white pepper Shredded chicken (can also cook raw chicken in the broth then shred after) Toppings: Chili oil Poached eggs Cilantro Green onion Fried garlic and shallots Soy sauce Sesame oil In a pot, heat a little oil and sauté the garlic, ginger and onion for a couple minutes, then add the carcass (skin or raw chicken if using) water and chicken bouillon. Bring to a simmer then add the rinsed rice, stir and cook for 1hr, stirring occasionally. Whisk well. It should be thick porridge like. Add white pepper, pepper, salt and more chicken bouillon if needed. Shred the chicken if using and add it in to warm it up.
