French onion dauphinoise 🥔 Serves 6-8 20 mins to prepare, 1½ hrs to cook 30g butter 4 onions, halved and finely sliced 4 fresh thyme sprigs 1 tsp light brown soft sugar 2 garlic cloves, finely sliced 75ml dry white wine 1kg Desiree or Maris Piper potatoes 600ml whole milk 300ml pot double cream 195g pack Gruyère, grated 1. Preheat the oven to gas 4, 180°C, fan 160°C. 2. Melt the butter in a large, heavy-based saucepan over a low heat. Add the onions and cook gently for 20 mins, stirring regularly, until completely softened. Add the sugar and thyme and cook for a further 5 mins, until lightly caramelised. 3. Add the garlic, cook for a further min, then add the wine and bubble for 2-3 mins, until sticky and reduced.
Discard the thyme sprigs. 4. Peel the potatoes and slice thinly (about 2-3mm thickness). Bring the milk and cream up to a boil in a large, wide pan over a medium heat. Add the potatoes, season to taste and simmer gently for 10-12 minutes, stirring carefully now and again, until the potatoes are almost cooked. 5. Stir a third of the cheese into the potato mixture and stir gently to melt. Spoon a third of the potatoes into a baking dish; about 20 x 30cm. Spoon over a third of the onions, then repeat until the potatoes and onions are used up, finishing with a layer of onions. Sprinkle over the remaining cheese. 6.
