♥️NONNA’s Homemade Gnocchi♥️  ♥️INGREDIENTS♥️ 1kg of white potatoes of your choice, peeled and chopped  250g of 00 flour 1 large egg, whisked 1/4 cup of Pecorino cheese salt extra flour for the bench/dusting ♥️DIRECTIONS♥️ 1. Bring a large pot of water to the boil. 2. Meanwhile, peel the potatoes and cut them into wedges. 3. Once the water starts to boil, add the potatoes to the pot and let them cook. 4. Once the potatoes are ready, drain the water and add them straight to a potato ricer and press the potatoes out on a clean bench. 5. Spread the mashed potatoes out and let them cool down for 5-10 minutes until they are warm, not hot. 6. Drizzle the egg on the potatoes, followed by your pecorino cheese. 7. Use your hands to mould all the ingredients together. Once they are mixed through, start adding the flour in sections at a time. 8. Add a little flour at a time, kneading the dough as you go. 9. Once the dough is ready, sprinkle flour on your bench and cut the dough into 3-4 sections and roll them out like long snakes. 10. Sprinkle a small amount of flour on top of the long dough pieces and begin to cut them from one end to the other, creating the gnocchi with a dough cutter or knife. 11. While you’re making the gnocchi, bring another large pot of salted water to the boil. 12. Once the gnocchi are ready, add flour to the top of them and mix through with your hands, ensuring they are not sticking to the bench or each other. 13. Add the gnocchi to the boiling water and cook for 5-6 minutes (You will know when they are ready when they have all risen to the top). 14. When the gnocchi are ready, transfer to a pan with your desired pasta sauce, mix through and finish with Parmesan cheese. Enjoy.
