How to make INSANE peri chicken at home in the air fryer! 1. Skin-on chicken is essential!! My preference is the leg/thigh chicken quarters and wings. You can also use a spatchcocked chicken but SKIN is the most important part. If you don’t have skin, you simply won’t end up with the same result. 2. Yoghurt & tomato puree are both functional ingredients in the marinade. Yoghurt tenderises the chicken, tomato adds a rich flavour and vibrant colour. 3. Cook on high heat! The concentrated intense heat of an air fryer will char the skin and give you that smokey peri vibe. Follow those steps and my recipe below, you’ll never cook peri chicken any other way 6 chicken legs 2 tbsp plain yoghurt 1 tbsp tomato puree 1 tsp chilli powder 1 tsp smoked paprika 1 tsp garlic powder 1 tsp coarse black pepper Salt to taste 2 tbsp peri sauce of your choice Mix everything together and marinade for 2 hours. (Don’t marinade over 24 hours as it will have a reverse effect and start to toughen the meat). Air fry for 25-30 minus on 200, starting skin side down. Coat in the sauce and enjoy.
