For cheese sauce add shredded cheese, milk and cream to a pot. Slowly mix as cheese starts to melt. Add dijon mustard.  Add in seasonings and mix until all cheese is nice and melted. Then add in rue to thicken the sauce mix. Then remove from heat and set aside.  Preheat oven to 350F. To a baking sheet, add parchment paper. Spread out your chips on your baking sheet. Add on your cheese sauce. Then add half to corn on top. Then add shredded chicken. Then rest of corn. Add shredded cheese.  Bake in the oven for 10-13 min.  Remove and add queso fresco and cilantro. Then drizzle the crema and add lime juice.
