Peanutty pork noodles 🍜 This has become a hyper-fixation dinner for us, and Meg keeps requesting it every week I’ve been trying to make more budget-friendly recipes that are still delicious to keep our grocery budget low, so I made these noodles using (mostly) what I had in my pantry plus some ground pork and spinach! These were so freakin’ delicious, we’ve made them a few weeks in a row and still aren’t tired of them. Give it a tryyyyy and enjoyyyyy FOR THE PORK 1 lb ground pork 2 cloves garlic, minced 1/2 tbsp ginger paste 1 tbsp soy sauce 1 tbsp brown sugar FOR THE SAUCE 1/2 cup soy sauce 1/4 cup rice vinegar 1 clove garlic, minced or grated 1 tsp ginger paste 3 tbsp peanut butter (creamy) Chili crisp -I used about 1-2 tbsp, but add more if you like it spicy 2 tbsp brown sugar NOODLES 8oz spaghetti 2 cups fresh spinach In a pan over medium-high heat, add 1 tbsp oil and add ground pork to the pan. I don’t touch the pork until it starts to get crispy on the bottom, about 2-3 minutes, then break the pork up into small pieces with a wooden spoon. Once it begins to brown, stir in garlic, ginger, soy sauce, and brown sugar. Meanwhile, mix all sauce ingredients and set aside. Cook the spaghetti until al dente. Combine cooked pork, cooked spaghetti, spinach, and sauce in a pan over low head. Toss, then cover, tossing every minute until spinach is wilted. Serve and enjoy! **Note, I made this as a one-pot meal because I have a tiny kitchen and no room to do dishes. I just cooked pork, set it aside, cooked the pasta, and added sauce, returned the pork to the pan, and added spinach. #dinner #budgetrecipe #easymeal #easydinner #noodles
