Couscous salad recipe🥰🤍, recipe below! Did you know how quick it is to prepare couscous? It is essentially a similar prep time and process to making oats. You just put them in the correct amount of boiling water and cover for 8-10 minutes. Recently, I have been making it as a substitute for white rice. While white rice and couscous have nearly equal calorie counts per 100 grams, couscous has a higher protein content and more vitamins and minerals, making it a healthier choice overall. My friend from New zealand showed me this recipe last year and I am obsessed! You have to try! Benefits of eating couscous: - source of fiber - source of plant-based protein - a healthy alternative to white rice - High source of immune-supportive selenium (antioxidant and good for thyroid function) Ingredients: - 1 red bell pepper - 1/2 a red onion - 1 cup of corn - 1 cup of tuna (half a can of tuna or a full one, it’s a personal preference) - 150g of couscous - 3 tablespoons of olive oil - Teaspoon of salt - Teaspoon of chili powder(optional) Instructions: 1. First boil 300ml of water.  2. Once the water comes to a boil, set it aside and pour 150g of couscous in the water and cover it up for 9 minutes. 3. Also boil your corn!  4. During this time, cut up your red pepper and red onion, make sure to slice them into small pieces!  5. When your couscous is ready, I like to take a fork and fluff them up. Let them rest for a couple of minutes. 6. Next your going to add your sliced red pepper, red onion, corn and tuna to the couscous. 7. Drizzle olive oil overtop, add the salt and chili powder(optional). 8. Mix it all up and enjoy!
