Hot cross buns - 300ml milk - 40g butter - 500g plain flour - 14g dried yeast - 50g caster sugar - 5g allspice - Pinch of salt - 180g currants - 2 eggs Cross - 60g plain flour - 50g water Glaze - 80ml water - 10g caster sugar - Peel of 1 orange - 2 star anise - 1 cinnamon stick 1. Start by adding the milk and butter to a pot on low heat. Don't boil it, you are just looking for the butter to melt and the milk to warm through.  2. Combine the flour, yeast, sugar, allspice, currants and salt in a large mixing bowl.  3. Beat the egg together and add to the dough. Mix with a dough hook or your hands if you don't have a mixer  4. Add the warm milk mixture and keep mixing until the dough comes together. Mix for 4-5 minutes before turning out and making into a ball.  5. Place onto a large oiled bowl, cover and rest for 1 hour or until it doubles in size.  6. Preheat the oven to 170c in a fan-forced oven  7. Turn out from the bowl and cut into 12 balls, bring each ball together using the palm of your hand (you are looking for a tight ball with no seams) and onto a greased baking tray. Cover with greased plastic and set in a warm spot to rise  8. For the cross, mix the flour and water and place into a piping bag, once the buns have proved, cross all the buns and bake for 25 minutes or until golden brown  9. For the glaze, place everything in a pot and bring to a simmer  10. Once the buns come out of the oven, brush with the glaze and let them cool before you serve.
