Day 14/20- Creamt Italian Sausage Pasta 🇮🇹 thanks so much for all the love on this series so far ❤️❤️ Ingredients: - 250g curly fettuccine - 2-3 Italian sausages, casing removed - 4 cloves of garlic, minced - 200g Passata (tomato purée) - 100ml thickened cream - 1 tsp chilli flakes - 1 tsp oregano - 1 tsp thyme - 1 tsp basil - Parmesan cheese - Parsley for garnish 1. Remove the casing from the Italian sausages and place them into a cold frying pan. Turn the heat to medium and break up the sausages with a wooden spoon, allowing to cook for 4-5 minutes, rendering the fat and getting a nice brown colour on the meat. 2. Pour pasta into boiling heavily salted boiling water, stirring for 30 seconds to 1 minute to avoid sticking 3. Add garlic, thyme, oregano, basil and chilli flakes, stirring for 30 seconds to combine the flavours and avoid the garlic burning. 4. Add the Passata and the thickened cream and allow to cook for 4-5 minutes on medium/high heat or until the cream reduces by about 30-40% 5. Strain your pasta when it’s about 1 minute away from being cooked, leaving a little water left in the pot, then pour it all on top of the cream sauce 6.
