A light, Mediterranean-inspired baked salmon served with roasted vegetables, flavored with a fresh lemon-basil glaze. Ingredients: - 2 salmon fillets (about 6 oz each), skin on, fresh - 1 cup broccoli florets, fresh - 1 cup zucchini, sliced - 2 tablespoons olive oil - 1 lemon, juiced and zested - 1/4 cup fresh basil, chopped - 2 garlic cloves, minced - Salt and pepper to taste Instructions: 1. Preheat oven to 400°F (200°C). 2. In a small bowl, whisk together lemon juice, lemon zest, chopped basil, minced garlic, salt, and pepper. 3. Place salmon fillets on a baking sheet lined with parchment paper. Brush the fillets with half of the lemon-basil mixture. 4. In another bowl, toss broccoli and zucchini with olive oil, salt, and pepper. Spread around the salmon on the baking sheet. 5. Bake for 15-20 minutes, or until the salmon is opaque and flakes easily with a fork. 6.
