20 minute meals under $20 Ep 11. Honey mustard chicken schnitzel and chips. A classic pub feed at home and on a budget. You can also batch prep the schnitzels and freeze them to make your life a lil easier in the near future.  Ingredients for 3:  2-3 potatoes  500g chicken breast  2 tbsp mustard (any will do) 1 tbsp honey  1 cup panic breadcrumbs (any breadcrumbs will do) Olive oil  1 tsp garlic powder  1 tsp paprika  1 tsp oregano  Salt and pepper  Method:  1. Cut the potatoes into chips. Normally we would soak these in water to release the starch but because this is a 20 minute meal, we’re absolutely going to bypass that step xx  2. Season the chips with 1 tbsp of olive oil and whatever seasoning your heart desires. I used an all purpose seasoning tonight but I listed three spices above that will do the exact same. But again, use whatever you have/like.  3. Once the chips are evenly coated, pop them into the air fryer at 200°C or 392F until you’re ready to serve.  4. Like I said, hopefully your breasts aren’t as big as mine so just slice yours in half and tenderise them (smack/beat them) to even the thickness out.  5. In a small bowl, combine the mustard and honey.  6. On a plate, season your breadcrumbs with a generous amount of salt.  7. Brush the breast with the honey mustard before placing into the crumbs and packing them on tightly. If you are going to use a pastry brush, use a plastic one not a bristle one because you know, salmonella.  8. In a pan on medium heat, use enough oil to coat the bottom of the pan and waiting until the oil is hot enough before pan frying the schnitzel/cutlet until golden and brown.  9. Once the schnitzels/cutlets are finished cooking, the chips should be nice and golden ready for service!
