you dont need to put in water... even if you cut the ends and store in airtight container and refrigerate.. have been doing it for quite sometime

I don’t put water. Just do everything you did and zip lock bag it. It stays fresh for weeks.

I did it and fermentation began. Water was fizzy and Google says it’s not safe to eat, but I’m confused. I see everyone store carrots that way.
