Single serve cottage pie meal prep What you'll need 500g x Extra lean beef mince 220g x Extra lean pork mince 500mls x beef stock 400g x canned crushed tomatoes 40g x tomato paste 300g x Carrot 300g x Celery 100g x Onion 400g x zucchini 2 tsp x Garlic powder 2 tsp x dried herbs 880g x Spud lite 10g x Dijon mustard 1tsp x garlic powder * Start by dicing up the onion, garlic, carrot, celery and zucchini. Set aside. Then peel and dice potatoes. * Add potatoes to a pot of salted water, bring to the boil - cook for 15 minutes and then drain. * Preheat oven to 180 degrees, fan forced * In the large pan, add the onion, garlic powder & herbs. Brown for 2 minutes, add in the tomato paste and the beef & pork mince. Break this down before adding in the canned tomatoes * Cook this for 5 minutes before adding in all of the diced vegetables, followed by the beef stock * Let this simmer and reduce for about 20 minutes, it is ready when most of the liquid has evaporated. * Evenly divide the mince mix into 4 oven safe containers * Add salt, pepper, Dijon mustard and garlic powder to your boiled potatoes and then mash until smooth, evenly divide the potato on top of the mince mix. * Bake for 15 minutes on 180 degrees until golden and crisp on top.
