PEPPERMINT CARAMEL CUPCAKES As South Africans, we love the peppermint and caramel combination. These cupcakes also have a hidden centre for extra indulgence.  If like me, you love baking, then you have to watch Season 5 of The Taste Master SA on SABC 2 at 7pm every Tuesday.  Next week is all about High Tea inspiration, and these cupcakes are the perfect treat for afternoon tea. The recipe makes 16 cupcakes.  You will need: 3 eggs - room temperature  1 cup sugar 2 tsp vanilla essence  125g butter- melted and cooled 1 cup milk 2 cups cake flour  4 tsp Royal Baking Powder Hidden centre 1/2 tin caramel dessert topping  40g peppermint chocolate Caramel whipped cream 1 1/2 cups whipping cream 1/2 tin caramel dessert topping To decorate 40g Peppermint chocolate ~In a bowl, whisk your eggs and sugar until pale and fluffy.  ~Add in your vanilla essence, milk, and melted butter and combine. Set aside until needed. ~In a separate bowl, sift your cake flour and Royal Baking powder. ~Gently combine your wet and dry ingredients. ~Grease and line a muffin tin and add a 1/4 cup of the cake batter into each liner. ~Bake in a preheated oven at 180 degrees for 15-20 minutes.  ~Allow the cupcakes to cool and then remove the centre and fill with caramel dessert topping and peppermint chocolate.  ~Whisk your cream until medium peaks form and then add in the rest of your caramel dessert topping.
