Mince and tatties!! A Scottish staple (or that’s at least that’s what my hubby & his family have led me to believe). (pre-order link in bio) 🙌 MINCE & TATTIES | Serves 3-4 INGREDIENTS ➡️MINCE: 1 tbsp Olive Oil 1 large Carrot, finely diced 1 large White Onion, finely diced 1 large clove of Garlic, finely diced 500g / 1lb Minced/Ground Beef (10-12% fat) 60ml / 1/4 cup Dry Red Wine (optional) 480ml / 2 cups Beef Stock (I use Knorr cube + water) 1 tbsp Worcestershire Sauce 2 tbsp Bisto Gravy Granules 1x Beef Oxo Cube, crumbled White Pepper, to serve (optional) ➡️TATTIES: 1kg / 2lb Small Baby Potatoes, any larger ones halved 2 1/2 tsp Salt, or to taste 1/4 tsp Black Pepper, or to taste 4 tbsp / 60g Butter, diced into cubes (leave at room temp) 120ml / 1/2 cup Double/Heavy Cream, at room temp METHOD 1️⃣Add oil to a large pan over medium heat. Add onion & carrot and fry until it all softens & begins to colour, then add the garlic & fry for a min longer. 2️⃣Add beef & fry until browned all over, breaking it up with your wooden spoon as you go. Stir in the wine & allow it to simmer for a few mins, then add the stock, Oxo cube, Worcestershire sauce & gravy granules. Give it all a good stir & bring to a simmer. Reduce heat to low & let it all gently bubble away for 40-45mins until the sauce thickens to a thick, rich gravy. Don't rush this process - low and slow is crucial to tenderise the beef and marry the flavours. Check for seasoning & adjust if needed. 3️⃣Meanwhile, add the potatoes to a large pot and fill with cold water. Stir in 2 tsp salt & bring to a boil. Cook the potatoes until the potatoes are soft right through the centre then drain in a colander (timings will depend on size of potatoes). A fork should very easily be able to pierce through the potatoes. Immediately add the butter & cream to the now empty pot and stir until the butter melts (the residual heat will allow you to do this). 4️⃣Add the drained potatoes & mash to your desired texture. Generously season to taste (I do 1/2 tsp salt and 1/4 tsp pepper) & mash a little more. Serve up the tatties with the mince next to it & a couple of pinches of white pepper if desired!
