Garlic crumbed salmon with courgettes and yoghurt  This dish for me is everything I love about food, nourishing your body and your mind with every bite. A seeded garlic crumb is pilled onto buttery salmon and baked until golden. I serve it with an elegant sauté of courgettes, chickpeas, spring onion, basil and parmesan. Plate everything up on a base of lemony feta yoghurt for a dish that tastes like you’ve ordered it in a restaurant but only took you 30 minutes. Under 600kcal and 50g protein  You will need 2 skinless salmon fillets  Dijon mustard 2 courgettes  2 spring onions  1 tin chickpeas  Fresh basil  150g thick 0% yoghurt like fage 30g feta  1 lemon  1 tsp garlic puree or 1/2 small garlic clove   For the crumb   2 slices of seeded bread (around 60g) Fistful fresh parsley  1 small clove garlic, grated Zest of one lemon  15g parmesan  Salt and pepper  Break up the bread into chunks, and add to a blender with 1 grated clove of garlic, a handful of fresh parsley, the zest of one lemon, grated parmesan, salt and pepper. Blitz until you have a fine breadcrumb mix.  Dry your salmon and season with salt. Brush over Dijon mustard and tip the breadcrumb over the top, pressing down lightly to help it stick. Drizzle over a little olive oil and place into the fridge. Mix the yoghurt with the juice of 1/2 a lemon, 1 tsp garlic puree and 30g crumbled feta. Mash the feta into the yoghurt. Using a peeler, peel your courgettes into ribbons avoiding the seeded core. In a pan, sauté the diced spring onion with the drained tin of chickpeas. Add in the courgette ribbons, a handful of chopped fresh basil and toss for 2 minutes just to warm the courgettes and wilt the basil. Finish with grated parmesan and a little pinch of salt and pepper.  Preheat your oven to 200c fan or air fryer to 195c. Bake the salmon for 8-10 minutes until the crumb is golden.
