homemade preserved sardines — the traditional Mediterranean-style way 🇹🇳🇪🇸🇮🇹 (healthy, flavorful, and lasts weeks in the fridge). سردينة مصبره 🐟🐠 ⸻ 🐟 Ingredients • 1 kg (2.2 lb) fresh sardines • Sea salt (about 2–3 tablespoons) • 1 cup white vinegar or lemon juice (for cleaning) • 1–2 cups olive oil (for preserving) • 3–4 garlic cloves, sliced • 1–2 bay leaves • 1 tsp black peppercorns or crushed pepper • Optional: chili flakes, paprika, lemon peel, or fresh herbs (like thyme or rosemary) ⸻ 🧽 Step 1: Clean the Sardines 1. Rinse sardines under cold water. 2. Remove heads and guts. 3. Pull out the central bone carefully (you can leave it if you prefer firmer texture). 4. Rinse again in a bowl with vinegar and water or lemon juice and water to remove odors. 5. Drain and pat dry with paper towels. ⸻ 🧂 Step 2: Salt Cure (Optional but Traditional) 1. In a shallow dish, layer sardines with sea salt (fish–salt–fish–salt). 2. Cover and refrigerate for 12–24 hours. 3. After that, rinse off excess salt and dry the sardines again. ⸻ 🍳 Step 3: Quick Cook or Blanch You can either: • Boil/poach the sardines gently for 3–4 minutes in water with vinegar and bay leaf (for safety and texture), or • Lightly fry them in olive oil for 2–3 minutes each side. Let them cool completely. ⸻ 🫙 Step 4: Preserve in Olive Oil 1. Arrange sardines in a sterilized glass jar. 2. Add sliced garlic, bay leaves, peppercorns, chili flakes, etc. between layers. 3. Cover completely with olive oil (make sure no air bubbles or fish are exposed). 4.
