A classic hearty roast chicken dinner perfect for a comforting Sunday meal. Ingredients: - 1 whole chicken (about 4 lbs) - 2 lbs potatoes, quartered - 1 lb seasonal vegetables (carrots, Brussels sprouts, squash) - 3 tbsp olive oil - 1 tsp salt - 1/2 tsp black pepper - 1 tsp dried thyme - 1 tsp dried rosemary - 4 cups chicken broth - 3 tbsp all-purpose flour - 2 tbsp unsalted butter Instructions: 1. Let the chicken rest for 10 minutes before carving. 7. Pour the pan drippings into a saucepan. Skim off excess fat. 8. In a small bowl, mix flour with 2 tbsp of cold water to make a slurry. 9. Place the saucepan over medium heat, add the slurry to the pan drippings, stirring constantly to make gravy. Cook until thickened. Add butter and stir until smooth. 10.
