Cajun Parmesan Chicken Bites with White Cheddar Rotini INGREDIENTS: 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces 1 tablespoon olive oil 4 tablespoons unsalted butter, divided 6 garlic cloves, finely minced, divided 1/2 teaspoon fine salt, plus more to taste 1/2 teaspoon ground black pepper 2 teaspoons salt-free Cajun seasoning 1/2 teaspoon smoked paprika 1/2 teaspoon garlic powder 1 ounce freshly grated Parmesan, for the chicken Pasta and cheese sauce: 12 ounces dry rotini 1 cup heavy whipping cream 1 cup whole milk 2 ounces full-fat cream cheese, softened and cut into cubes 4 ounces low-moisture whole-milk mozzarella, freshly shredded (about 1 cup), divided 2 ounces Parmesan, freshly grated, divided 4 ounces white cheddar, freshly shredded (about 1 cup) 2 tablespoons finely chopped fresh parsley 1 cup reserved pasta cooking water, used as needed DIRECTIONS 1.
