Sri Lankan Chicken Kottu Chicken kottu is one of the best and most popular Sri Lankan street foods, and probably one of the most loved Sri Lankan dishes around the world. Wherever you go in Sri Lanka, you’re almost guaranteed to find a kottu shop serving this delicious dish. The sound of the metal blades chopping the roti on the hot griddle is something every Sri Lankan knows and loves. There are so many varieties of kottu now, including beef kottu, egg kottu, vegetable kottu and many more. Today I’m making chicken kottu, but you can follow the same steps and make any type of kottu you like. Ingredients Large paratha – 8, chopped into small pieces Chicken pieces – as much as you like Chicken gravy – 1 cup Eggs – 4 Carrot – ½, finely thinly sliced Onion – 1, sliced Garlic – 2 cloves, chopped Rampe (pandan leaves) – few pieces Curry leaves – few leaves Spring onion or leeks – a handful, chopped Dark soy sauce – 3 tablespoons Pepper – 1 teaspoon Chilli flakes – 1–2 teaspoons Salt – a pinch Oil – 1½ tablespoons Method Heat oil in a large pan. Add chopped garlic, onion, rampe and curry leaves. Sauté gently until the aroma is released. Add the sliced carrot and fry for a few minutes. Sprinkle a pinch of salt, then move the onion and carrot mixture to one side of the pan. On the other side of the pan, add the eggs. Sprinkle pepper and chilli flakes over the eggs, then scramble until cooked. Mix the scrambled eggs with the onion and carrot mixture. Add the chopped paratha, chicken pieces, chicken gravy and dark soy sauce. Mix everything together and stir-fry until all the ingredients are well combined and heated through. Finally, add chopped spring onion or leeks. Switch off the heat immediately and mix gently. Do not cook the leeks for too long, as keeping them fresh gives the kottu a lovely flavour and texture.
