Posted @withregram • @reeniepoh The ultimate comfy cold weather food, though better enjoyed if I’m walking down the streets of 🇯🇵. As mentioned I have been cooking Miso soup WRONG for the first half of my life and for optimal enjoyment, Miso have to be is added at the right time. No hard and fast rules on what ingredients you want in this dish but pay attention to when you add your Miso and tofu. Ingredients [serves 4-5 ] - 1/2 onion ( julienne) - 1 carrot ( sliced) - 8cm thick Daikon (cut into thin slices ) - 250g sliced Pork ( marinate with 1Tbsp of sake for 10mins to remove porky smell ) - 1 stalk Green onion - 1 block of Tofu - 1.2litre Dashi ( I used Dashi powder mixed with hot water ) - 6 Tbsp low sodium Miso - Sesame oil and cooking oil How to cook: 1) Sesame oil in heated pot. Dump onions, Carrots, Radish into pot and fry briefly. Put lid on and cook for 1min on Medium heat. 2) Drain excess sake-blood liquid from pork. Add pork and fry briefly with the vegetables. Put lid on and cook till pork is cooked and no longer pink. 3) Add in 1.2L of Dashi and bring soup to rapid boil on High. 4) Lower heat to low and simmer soup for 15mins till vegetables is cooked and soft. After 15mins, skim oil and scums off surface of soup. Turn heat off. 5) Just before serving, bring soup to a big boil and turn heat off before adding Miso , Tofu and green onion. Place lid on and let soup sit in the pot for a few minutes before serving. Miso MUST be added last, preferably right before serving and do NOT boil miso soup because they lose their fragrance and wonderful flavor from over cooking. Tofu would be in its best texture adding in last as tofu can lose a lot of its moisture from over cooking. Have fun and lemme know how this went for you guys:) ❤️❤️❤️ #reeniecooks #stayhome #stayhomerecipes #japanfood #japanrecipe #misosoup #EasyRecipes #tonjiru
