To see how I make and roll the dough check the second post on my page “cinnamon rolls” it’s the same method This will make 12 - 14depending how thin you roll the dough and how thick you cut them. I made a bigger portion and I was gifting these to my kids pre school educators.  7g instant yeast  275ml warm milk (325ml if not using egg)  85g melted butter  30g sugar  480g bread flour  40g cocoa powder  1 x egg Filling:  chocolate spread (I used a supermarket brand that had no nuts) Chocolate cream cheese Icing: 2 x tbs spoon cocoa powder  150g icing sugar  60g cream cheese  1-3 tsp milk  Topping: Grated dark chocolate  Add the dough ingredients in the order listed above and mix well till combined, take out onto a floured surface and knead for 5-10 min (longer is fluffier)  Add to a clean bowl, cover and rest for 1 hour to rise. Once dough has risen decompress with a punch or press. Roll out to a rectangle about 45-50 cm wide.  TIP: using a pastry cutter or your hands keep pushing the sides into straight lines into a rectangle shape while rolling. Spread your chocolate spread as thick as you want it and then roll it up. Press down the flatten the log with pressure, using a bread knife slowly cut into slices as shown in the reel minimum of 2 inches thick (so they don’t topple over) and add to a dish with parchment paper. Once they’re in the dish give them another gentle press to flatten some more.  Cover and rest 30 min and preheat your oven to 180C  While it’s resting make your icing by mixing all the ingredients together with a whisk or a spoon, add 1 tsp of milk at a time until you get the desired consistency. If you’re using grated chocolate get that ready too.  Bake buns for 18 - 20 min, leave to cool for 5 min then pour over the icing and sprinkle with chocolate shavings.
