Loobyeh b lahme a3yshe ghanoom.  These raw borlotti beans are the most delicious addition to this dish and simply takes it to next level yum !  Recipe below ⬇️ feeds 3-4  You’ll need  1 kilo fat trimmed cubed lamb shoulder or boneless lamb shanks .  1 kilo flat beans trimmed top n bottom and cut with the seam taken off .  1-2 cups fresh borlotti beans 🫘 taken out of the skin . No need to soak they will cook with the beans and meat .  1/4 cup olive oil  1 tbs salt  1tsp black pepper  1/4 cup water  Method ⬇️  In a large flat pan heat up the olive oil and add lamb and sear well , add the flat beans and mix together by tossing the pan , try not to stir too much as it ruins the shape of the beans .  Add the salt n pepper  Add in the water and the borlotti beans and toss well again . Simmer on a high heat uncovered about 10-15 mins .  Then cover and lower the heat and simmer on lowest heat about 3 hours , until the lamb is fork tender .  The longer lamb cooks for on a low heat / covered the better .  If using the lamb shanks off the bone - half way through cooking cut them up into smaller pieces so they’re easier to shred after .  Serve up with vermicelli rice (recipe in my highlights ) scroll down a little and eat with fresh Lebanese bread and natural or Greek style yoghurt .
