You’ve gotta try this Masoor Dal recipe / adult and kid friendly ! Nothing wrong with nuggets, pizza and pasta but I’m always on a mission to diversify my kids palate and get them to eat nutritious meals!   Feel free to mix up the veggies, use what you have ! 1 tbsp ghee 1/2 tsp cumin seeds Pinch of hing 1/2 small onion, finely diced 1/2 red bell pepper, diced small 1/2 zucchini, diced small 1 small carrot, peeled and finely diced 3/4 tsp salt 4 cloves garlic, grated 1/2 tsp garam masala 1/2 tsp coriander powder 1/2 cup whole masoor dal (brown  lentils) 2 cups water Handful chopped cilantro Handful shredded cheese for serving  DIRECTIONS With the Instant Pot on saute mode, add the ghee followed by the cumin seeds and hing.Once the cumin is sizzling, add the onions and cook until translucent and slightly golden. Add the red pepper, zucchini, or whatever veggies you have and after cooking for a few minutes add the garlic, salt, and dry spices. Cook until the garlic is fragrant. Then toss in the rinsed and drained lentils along with 2 cups water. Hit cancel on the IP, change the mode to High Pressure Cook for 15 minutes and let natural release. If you want it more soupy then add more water at this point. If it’s too soupy, put it back on sauté mode and let it simmer until it thickens. Lastly, add in the chopped cilantro and squeeze of lemon if you prefer. Taste and adjust salt.
