Call it Courgette Fries or Zucchini Fries, these healthy fries are absolutely delicious and a great alternative to potato ones. They are perfect as a side dish or as a snack, vegan, gluten free, low carb and so easy to make. The fries are quick in the air fryer, but they also can be baked in the oven. Serve them with your favourite dip and they will disappear from the plate in a matter of minutes! Ingredients: -2 medium courgettes  -1 tablespoon extra virgin olive oil -1 teaspoon paprika  -1 teaspoon garlic powder  -1 teaspoon dried herbs  -1/2 teaspoon salt, or to taste -1/2 teaspoon black pepper -2 tablespoons cornmeal  Instructions: 1. Remove the ends from the courgettes and slice into fries. Add them into a large bowl. 2. Place the courgettes in your preheated air fryer, leaving space in between so they don’t overlap. If you have a wire rack, you can do a second layer to cook more in one batch.  4. Set your air fryer to 200 degrees C and cook for 7-10 minutes. The time can vary depending on air fryer model so keep an eye after 7 minutes. Carefully remove when done. Continue cooking in batches.  5. If you want to bake them in the oven, simply place on a lined baking tray and bake for 20-25 minutes at 210 degrees C or until golden.  6. Serve warm with tzatziki or your favourite dip.
