Lemon Ginger Cheesecake for the first day of Fall!🥳🍋🫚 Here’s how I made it 👇  Recipe For crust 1 2/3 cups crushed graham crackers 1/3 cup brown sugar 6 tbsp unsalted butter, melted 1/2 tsp ground ginger For cheesecake 16 oz cream cheese (softener room temp) 1/2 cup sugar 2 large eggs  1 1/2 tsp powdered ginger 1 tsp vanilla extract  Juice of 1 lemon Zest of 1 lemon 4 tbsp cream Lemon curd 4 egg yolks  2/3 cup granulated sugar Zest of 1 lemon 1/2 cup lemon juice 1.5-2.5 tbsp fresh grated ginger (taste as you go, it can take more than expected) 6 tbsp butter, softened and cut into chunks Whipped cream, lemon slices, and mint for garnish (optional) Preheat the oven to 350 F, then crush your graham crackers and mix them with the butter, powdered ginger, and sugar. Pour the mixture into a buttered 9-inch springform pan, then press it down all around so you have a nice crust (not too thick). Cook it in the oven for 6 minutes, then remove while you make the filling. In a bowl with electric mixer (or blender), whisk your cream cheese, then add the sugar and all remaining cheesecake ingredients. Mix until smooth, quickly blend if chunky. Pour the mixture over the crust, then fill a large baking pan with an inch or two of hot water, then place the cheesecake pan inside the water bath and bake for 45-60 mins until the middle is almost set but you see a slight wobble.  While the cheesecake is cooking, make the curd by adding the eggs, lemon juice, and zest to a cold pot, then put it on low and mix everything together. Add the butter chunks and ginger and continue to cook and mix on low until the mixture has thickened (it may seem like it won’t happen but be patient and adjust the heat slightly if necessary). Once thickened, remove from the pot. Once the cheesecake has cooled (you can cool it on the fridge), top it with a generous amount of curd. Decorate with sliced lemons, mint leaves, and whipped cream and enjoy! #lemongingercheesecake #baking #fallrecipes #dessert #lemoncurd
