Ricotta Stuffed Shells 🐚 🧀  The American Journal of Clinical Nutrition did a meta analysis of nearly two dozen studies and found that processed carbs may increase risk of obesity, diabetes and heart disease more than fats. They analyzed over 350,000 individuals over 23 years to evaluate heart disease risk.  Nothing is better for the gut, heart and brain than fiber- and antioxidant-rich veggies. Cabbage is a superstar of the bunch for its affordability and versatility in cooking. Traditionally, people stuff cabbage with meat but I thought this could be a fun vegetarian twist on the dish.  See recipe below and replace with the dairy-free equivalents of any of these ingredients if you’d like.  For healthy meal delivery, check out @ilanameals  Ingredients: 2-2 1/2 cups shredded mozzarella, divided  2 cups marinara, divided  1/2 cup parm  16 oz ricotta  Whole large cabbage  1 egg  2 tbsp Italian seasoning  To make it, core the cabbage and boil it whole for 20 minutes.  Add 1 cup marinara to the bottom of a 9x13 baking dish.  Preheat oven to 375F and prepare the filling by mixing 16 oz ricotta with 1 egg, 1 1/2 cups mozzarella, 2 tbsp Italian seasoning, and 1/4-1/2 cup Parmesan cheese.  Drain the cabbage well and peel off leaves. Use 2-3 leaves at a time and add 2 -4 tbsp filling into each one. Roll up and place in the 9x13 dish. Add additional cup of marinara and tip with 1:2 cup additional shredded mozzarella and bake covered for 30 minutes.
