Starting with my homemade cannoli shells made with Marsala wine, fried until perfectly crispy. The perfect Italian treat to wrap your lips around." --- Cannoli Shell Recipe - 250g all-purpose flour (2 cups) - 15g granulated sugar (1 tbsp) - 3g salt (1/2 tsp) - 30g unsalted butter, cold and cut into cubes (2 tbsp) - 1 egg yolk - 120ml sweet Marsala wine (1/2 cup) (or substitute with white wine) - Vegetable oil, for frying 1. In a large bowl, whisk together the flour, sugar, and salt. 2. Add the cold butter cubes and mix until the mixture resembles coarse crumbs. 3. Stir in the egg yolk and Marsala wine until the dough begins to come together. 4. Knead the dough on a floured surface until smooth, about 5 minutes. 5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. 6. Roll the dough out thinly (about 1/8 inch thick) on a floured surface. Cut out 4-5 inch circles. 7. Wrap each circle around a cannoli form and seal the edges with beaten egg white. 8. Heat vegetable oil to 175°C (350°F) in a deep pan and fry the cannoli shells until golden and crisp, 2-3 minutes per batch. 9. Drain on paper towels and remove from the molds once cool Ricotta Filling with Strawberries: - 500g fresh ricotta cheese (2 cups) - 120ml fresh cream (1/2 cup) - 60g powdered sugar (1/2 cup) - 1 tsp vanilla extract - 75g finely chopped fresh strawberries (1/2 cup) - Zest of 1 lemon (optional for added freshness) In a bowl, whisk together the ricotta, fresh cream, powdered sugar, and vanilla extract until smooth. 2. Fold in the chopped strawberries and lemon zest (if using) until evenly combined. 3. Refrigerate the filling for 30 minutes before piping into the cannoli shells.
