With @Jus-Rol North America puff pastry, the shells come together in about 30 minutes because you don’t have to remember to defrost the dough–just unroll it, cut out your circles, and bake until super flaky. Recipe below–what are you looking forward to baking this spring? Yield: 24-30 mini tarts Ingredients 1 package Jus-Rol puff pastry Storebought lemon curd 3 egg whites 3⁄4 cup sugar (150g) Unroll the puff pastry on a flat surface. Working quickly, use a 2” biscuit cutter or glass to cut out as many rounds as possible (you should get at least 24 rounds) and transfer to a parchment lined baking sheet.  Use a 1.5” cutter to press a firm indentation into each round, taking care to not cut all the way through. Place baking sheet in the fridge to chill for at least 10-15 minutes while you preheat the oven to 350 degrees F. Bake puff pastry rounds for about 8 minutes, or until just starting to puff. Remove from oven and quickly press the 1.5” cutter inside each round once again (this will help with the cutting later on). It’s okay to press down and deflate the dough; it’ll re-puff as it continues to bake. Bake for an additional 10-12 minutes, or until golden and fully puffed. Let tart shells cool while you make the meringue. Combine the egg whites and sugar over a double boiler and whisk until it reaches 160 degrees F. Immediately transfer to a stand mixer fitted with a whisk attachment (or use a hand mixer) and whip for 5 minutes, or until white and billowy. To assemble, use a sharp knife to cut out the center of each puff pastry round. Fill with a dollop of lemon curd and pipe the meringue on top.
