Super Crispy Cheesy Mozzarella Potato Balls 🧀✨ These crispy mozzarella potato balls are golden and crunchy on the outside, soft and fluffy on the inside, with the ultimate gooey cheese pull. The perfect party snack, appetiser, or comfort food recipe! 📝 Ingredients Potato Balls * 8 medium potatoes, peeled * 1 tsp salt (plus extra for boiling) * 2 tsp chicken bouillon powder * 2 tsp onion powder * 2 tsp garlic powder * 1 tsp smoked paprika * 2 eggs * 1 cup shredded mozzarella * ¾ cup grated Parmesan * 1 cup mozzarella, cut into small cubes Crispy Coating * 1 cup plain flour * 2 eggs, beaten * 2 cups crushed cornflakes (or breadcrumbs) Spicy Mayo * ½ cup mayonnaise * 1 tbsp sriracha * ½ tsp smoked paprika * ½ tsp garlic powder * ½ tsp onion powder * ½ tsp dried parsley 👩‍🍳 Instructions 1. Boil the potatoes in generously salted water until fork tender. Drain well and mash until completely smooth. 2. Add the salt, chicken bouillon, onion powder, garlic powder, smoked paprika, eggs, shredded mozzarella, and Parmesan. Mix until fully combined. 3. Refrigerate the mixture for 30 minutes to firm up. 4. Scoop out portions of the potato mixture and flatten slightly in your hand. Place a cube of mozzarella in the centre, then seal and roll into a smooth ball. 5. Freeze for 1 hour, or until firm. 6. Coat each potato ball in flour, then dip into the beaten eggs, and finally coat well with the crushed cornflakes (or breadcrumbs). 7. Heat oil to 180°C (350°F) and deep-fry for 3–4 minutes, or until golden brown, crispy, and the cheese is melted. 8. Meanwhile, whisk together all the spicy mayo ingredients until smooth. 9.
