Qabli Palaw is Afghanistan’s 🇦🇫 national dish, known for its fragrant rice, tender meat, caramelized carrots, and sweet raisins. It takes time to prepare, but the rich flavors make it worth the effort! Ingredients: 2-3 cups basmati rice 500g lamb, veal, or beef 4 medium onions 2 carrots Handful of raisins 3 tbsp sesame Nadi oil 1 tsp salt (to taste) 1 tsp cumin 2 tbsp sugar 1 tsp cardamom Instructions: Prepare the Rice Rinse the rice several times until the water runs clear. Soak it in water for at least 2 hours to remove excess starch and achieve a fluffy texture. Make the Broth (Yakhni) Slice the onions into thin half-rings. Heat sesame oil in a deep pan and fry the onions until golden brown. Add the meat and cook until browned. Season with salt and cumin. Pour in boiling water until the meat is fully submerged. Cover and simmer on low heat for 45-60 minutes until the meat is tender. Add more water if needed. Prepare the Carrots and Raisins Peel and cut the carrots into thin strips. Fry them in a little oil, adding sugar to lightly caramelize. Briefly fry the raisins in the same pan. Set both aside. Cook the Rice Bring a pot of water to a boil. Add the soaked rice and cook for about 5 minutes until 80% done. The grains should still be firm. Drain and return the rice to the pot. Assemble and Steam Mix the prepared broth (Yakhni) into the rice. Shape the rice into a mound and place the meat, carrots, and raisins on top. Sprinkle cumin and cardamom over everything. Cover the pot and steam on high heat for 2-3 minutes, then reduce to low heat and let it cook for another 30 minutes. Place a cloth under the lid to absorb excess moisture. Serving Fluff the rice gently and serve with the meat, carrots, and raisins arranged on top. Tip: Slow cooking enhances the flavors, so take your time for the best results!
