𝐌𝐚𝐜𝐚𝐫𝐨𝐧𝐢 𝐒𝐚𝐮𝐦𝐨𝐧 𝐰𝐢𝐭𝐡 𝐏𝐚𝐧𝐳𝐚𝐧𝐢. Back in the 80s/90s, Macaroni was the most popular type of pasta in Mauritian households. The combination of Macaroni with tinned Pilchards or Mackerel is indeed one very Mauritian dish - unique to Mauritius.  I never saw Macaroni Saumon in any country that I travelled to neither I can recall any international cook or foreign food blogger making it. Every time I make Macaroni Saumon as an adult, I get carried away with a sweet nostalgia. I recall my parents cooking it early mornings whenever I had a school outing. I would eat it surrounded by my friends at the beach.  Anyways, here is my recipe of Macaroni Saumon – it is easy, quick and tastes good. For 2-3 person. Ingredients: - 200g Macaroni Panzani - 1 can Pilchards/Mackerel (215g) - 1 Jar Sauce Basilic Panzani - 10 Curry Leaves - 1 tbsp Thyme - 1.5 tbsp Garlic (grated) - 0.5 tsp Ginger (grated) - 40g Onions (thinly sliced) - 80g Carrots (grated) - 80g Cabbage (coarsely shredded) - 40g Onions (thinly sliced) - Salt - Water - 1 tsp Olive Oil - Cooking Oil - 1 tbsp Fish Sauce (optional) - Breadcrumbs (optional) - Cheese (optional) - Salt - Pepper How to make this: 1/ In large pan, add 1.4 litres water and 1 tsp salt. Bring to a boil. 2/ Add the Macaroni, cover halfway and cook as per packaging instructions or till your desired doneness. 3/ Drain, add 1 tsp Olive oil. Stir and keep aside. 4/ Heat 2 tbsp oil in a pan. Add the canned Pilchards or Mackerel (I removed the bones prior). Cook for 1 minute on each side. Remove and reserve. 5/ In the same pan, heat 1 tbsp oil. Add curry leaves, thyme, ginger, garlic and cook for a few seconds till fragrant. Add onions and cook for a few more seconds. 6/ Add the Sauce Basilic Panzani and mix. 7/ Add the Macaroni, carrots, cabbage, pre-cooked pilchards or mackerel, 2 pinches salt and 2 pinches pepper.
