Episode 6 - Vegan Game Day Eats  Vegan Chili Cheese Fries ⬇️ Ingredients :  • 2 c. frozen vegan meat crumbles  • 1 c. vegetable broth  • 1/2 c. canned diced tomatoes  • 1 tbsp. tomato paste  • 1/2 medium white onion, diced • 1 - 2 garlic cloves, minced  • 1/2 tbsp. chili powder  • 1/2 tsp. cumin  • 1 tsp. nutritional yeast  • 1/4 tsp. garlic powder  • 1/4 tsp. onion powder  • 1/4 tsp. oregano  • 1/4 tsp. red pepper flakes  • salt + pepper to taste  • frozen french fries of choice  • vegan cheese shreds  • vegan sour cream  • scallions to top, optional  Instructions :  1.) To a pan on medium high heat add some olive oil, then sauté your onions with a pinch of salt + pepper, cook until slightly golden. Next add in the minced garlic, cook another 1-2 minutes.  2.) Now add in all the spices and the tomato paste, cook for another minute or so. Then add the vegan meat crumbles, canned diced tomatoes, vegetable broth, and season with salt and pepper. Stir and simmer for 10 minutes. Taste and adjust seasonings if needed.  3.) While the chili simmers cook your french fries according to package instructions. Once finished place the fries on either a baking sheet or aluminum foil. Top with the vegan chili and a generous amount of vegan cheese. Place in the oven or toaster oven and broil until the vegan cheese is melted.  4.) Top with chopped scallions and vegan sour cream.
