For the meatballs: 1/2 lb ground pork 1/2 lb ground beef 2 eggs 1 C breadcrumbs (I used GF) 1/4 C grated cheese 2 tbsp chopped parsley 2 cloves garlic, minced 1/2 tsp salt Cracked black pepper Drizzle of extra virgin olive oil For the sauce: Extra virgin olive oil 1/4 medium onion, diced 1 clove garlic, minced 1 3/4 - 2 C tomato sauce 1-2 tbsp mascarpone cheese Sundried tomatoes, sliced (I used six) Fresh basil, sliced Grated cheese for serving Instructions: Mix all ingredients for the meatballs together in a large bowl at whatever size you'd like. I had about 20 meatballs. Set a burner to medium heat and add EVOO to a large saute pan. Once the pan is hot, add the meatballs, turning them over to ensure they brown on all sides. Remove from pan. Cook a 12-16oz package of spaghetti while you prepare the sauce (I used a 12oz package of GF brown rice spaghetti). In the same large saucepan that you cooked the meatballs in, set heat to medium. Add EVOO and the diced onion once hot. After 2 minutes, add the garlic. After another 2 minutes, add 1 3/4 - 2 C tomato sauce and the sundried tomato. Add the meatballs and cover in sauce. Let that simmer together on medium-low heat. Once pasta is ready, remove meatballs from the pan and add in the spaghetti with the mascarpone cheese and basil. Serve with extra basil, grated cheese, and of course, the meatballs.
