EID Mubarak with Omani Shuwa - A festive dish that has been my favorite since all my years in Oman. Traditionally Shuwa is marinated, wrapped in bananas leaf and sealed in a jute bag with some markings on it, cooked in an underground community pit for 48hrs. This traditonal  taste can never be replicated but oven method is very close though  Shuwa masala is a blend that everyone has his/her own. My friend was kind to share their family recipe for the masala / marinate which i have used in my recipe with some more addition to it. I have served shuwa on a bed of flavorful rice and Omani salsa  Point to note: - I prefer well seasoned meat, so i do a salt brine for 24hrs before i begin with the marination. I leave the meat uncovered in the refrigerator with salt rub. Meat releases water and then soaks this salty brine resulting in an extremely flavorful meat. You may do this or skip - since i did salt brine, i used very less salt, enough for the marinade I am using about 950gm of lamb shanks and the below ingredients are based this weight  for the masala  2TB coriander seeds 1TB cumin seeds 1/2TB black pepper corns  5-6 green cardamom  A small piece of nutmeg  6-7 pieces kebab chinni (this is i added extra and that’s allspice)  4-5 strands of Saffron (added this as my tweak) 5 round dried red chilies 1 inch cinnamon  - dry roast all the above for 2-3min in lowest heat. Then cool down, grind with 10-12 cloves of garlic and 1tsp turmeric powder  - now mix the masala with: 1. 2TB red chili flakes 2. 50ml dates vinegar (usually white vinegar is used) 3. 2TB extra virgin olive oil 4. Very little salt 5. 3TB tamarind paste/pulp  6. 1/2tsp baking soda (optional) #shuwa #omanifood #eidmubarak
