Flaky trout, crunchy toasted walnuts, peppery rocket, crisp green beans, and a sharp lemon-vinegar dressing. Cool and flake. Toast walnuts in a pan with a drizzle of garlic oil, smoked paprika, salt, and pepper. Wilt spinach with a splash of water. Layer spinach, rocket, basil, mint, cucumber, trout, and walnuts in lunch boxes.    Whisk together the ingredients for the lemon-olive oil dressing and pack on the side to drizzle just before eating.
