Kabuli Pulao With Afghan Green Chutney🇦🇫                                Recipe📜                                                     Green Chutney🍀                                              1 bunch of fresh coriander, half a bunch of fresh parsley, 3 garlic cloves, 1 jalopeño, 75ml white vinegar, 50g walnuts (i didnt have any), salt & pepper.                         Kabuli pulao🐑                                            Start off by cutting your lamb into smaller pcs (im using lambs chops), add salt to taste.                                                                For the Garam masala: coriander seeds, cumin seeds, green cardemom, black cardemom, clove, star anise, fennel seeds, cinnamon stick, mace, nutmeg, black peppercorns, toast them on a pan, use only half of the whole nutmeg, ground the whole spices in a coffee grinder / blender.                                             slice carrots into thin strips, julienne onions. Grab 2 seperate bowls, add pistachios to one and raisins to the other, add boiling water. Let them soak for 5mins. Drain the water, remove the skin of the pistachios using a kitchen towel, sliver almonds, peel 5 garlic cloves.                                                 Next add butter to a dutch oven / large pot, add carrots & raisins, cook for few minutes, add a generous pinch of sugar, set aside.                                  Next sear your lamb pcs on one side, set aside, add onions, 3 bay leafs, peeled garlic, cook for few minutes, make a hole in the pot, add a dash of oil, add a generous amount of our Garam masala, let it cook in the oil for 1 minute, mix everything, add the lamb back to the pot, fill with enough water to cover the lamb, cover with lid, let it cook for 2 hour on medium. After 2 hours when the liquids have reduced enough to parboil the rice in it, add washed and soaked basmati rice, cover with lid, turn the heat off and wait 15minutes. Make the sugar sauce by adding few tbsp of granulated sugar to a sauce pan, after melting, add a cup of water, small parsley bunch, knob of butter, pinch of our garam masala, strain it. After 15mins the rice should be almost cooked throughly, add a little amount of our sugar sauce on top, add our carrots & raisins, pistachios, almonds, cover with lid, in the oven for 45mins 200°C.
