Crushed Chilies Recipe (A Packo Crushed Chillies copycat recipe) 250g chilies (chopped/crushed as desired) ½ cup oil 1 cup vinegar 2 tbsp pickle masala 1/4 tsp turmeric 1 head of garlic for the garlic lovers or 6 cloves of garlic (peeled and chopped) 1 tsp coriander seeds 1 tsp jeera seeds 1 tsp soomph seeds ½ tsp mustard seeds Curry leaves 1.5 tbsp salt 1/2 tsp sugar In a pot on medium-low heat, add the seeds (except the mustard seeds) toast until fragrant, coarsely crush in a mortar and pestle and set aside. To same pot had the chilies and salt and bring to a gentle simmer for about 2 minutes (you can also add the garlic at this point if you want the garlic to have a pickled/vinegary taste). Remove using a slotted spoon and set aside. Add the oil to the pot, followed by the toasted seeds and mustard seeds, curry leaves, the garlic, turmeric and pickle masala, stir for minute. switch off the heat, add the chilli and stir. Allow to cool, store in an airtight container and enjoy as condiment/pickle. #curriedchillies #crushedchillies
