Chicken Fatteh by @ryaan_chaouk 🤍. Ingredients:🕊️ Fro the chicken; 2 kilos chicken breast  1 tbs paprika  1 tsp paprika  1 tsp cumin  1 tsp ground coriander  2 tsp sumac  2 tbs Olive oil  Salt and black pepper to taste For the bread; 1 large lebanese bread  Olive oil  For the yogurt sauce; 7 cups plain yogurt  1/2 cup tahini  3 garlic cloves,minced  Salt to taste  For the Garnish; Paprika  2 tbs finely chopped parsley  2 tbs ghee for the nuts  1 cup almond  1 cup pine nuts. Preparation Method: 1:Cut the chicken breasts into a small pieces,season with salt,paprika,cumin pepper,ground coriander,sumac,black pepper.Mix well,cover and leave in the refrigerator for 1 hour. -Make the garlicky yogurt sauce: 2:In a mixing bowl,combine the yogurt,tahini,minced garlic cloves and season with salt.Whisk until well-combined. -Prepare the bread: 3:Tear the bread into bite size pieces,spray it well with oil & bake in the oven until crispy & golden brown. Cook the chicken: 4:Heat a large non-stick pan over high heat.Add the chicken,cook until color change & fully cooked.stirring every few minutes.(drain all the excess water from the chicken). Toast the pine nuts: 5:Toast the almonds and pine nuts in a pan with the ghee.Stir constantly to ensure they toast evenly and don’t burn. Assemble the chicken fatteh: 6:Layer the fatteh starting with crispy bread,then the chicken,then the yogurt sauce. 7:Finally,sprinkle some paprika,garnish with parsley,and followed by the toasted pine nuts over the top 6:Prepare a large serving dish,add the crispy bread as a base,add the chicken on top of the bread,finishing with the garlicky yogurt sauce.
