Almond extract  1/2 tsp. Vanilla  1/2 C. Light Corn Syrup  4 C. Powdered Sugar  Dark Chocolate  Drain the cherries; Dry the cherries.  Make the creme by blending together the butter, salt, almond, vanilla, and corn syrup until smooth and creamy.  Mix half of the sugar into the butter mixture then mix in the remaining sugar til completely combined. It should be smooth yet thick.  Chill the creme in the freezer for 30 minutes to a hour to firm up for easier handling. When its firm enough work quickly, take a small amount and roll it then flatten it, put a cherry in the center, wrapping the fondant around the cherry, rolling the cherry around to get an even smooth finish. Place the cherries on a parchment lined baking sheet. Chill the cherries again in the freezer for 30 more minutes.  Melt the chocolate either over a double boiler or in the microwave.   Dip, drip, and put the cherries on a parchment lined baking sheet to finish setting up.  Store the Cordials in an airtight container in the fridge for upto 2 weeks.  Notes:  Use Cherries with or with the stems (w/o stems is easier) 24 hours before making Cordials you can soak the Cherries in liquor of choice for 24 hours (this is completely optional). Not a fan of almond; double up the vanilla or use peppermint extract.  Don’t like dark chocolate use your favorite kind of chocolate.
