The Fish and Kumara Chip Burger!! 🇳🇿 Fish and chips has become synonymous with New Zealand and I figured the best way to pay tribute in this episode would be to work it into a burger, whilst also showing the Kumara some love. Ingredients: For the fish: - 4 fish fillets - 2 cups all-purpose flour - 1 egg - Sparkling water - 1 teaspoon baking powder - 1 teaspoon salt For the sauce: - 1 cup mayonnaise - 2 tablespoons lemon juice - 1 small dill pickle - 2 teaspoons capers - 3 tablespoons fresh parsley Method: 1. Prepare the chips: Peel the potatoes and cut them into chips before placing them in a large bowl of cold water and set aside. 2. Prepare the tartare sauce: In a small bowl, mix together the mayonnaise, lemon juice, dill pickle, capers, and parsley. Set aside. 3. Heat a deep-fryer or large, deep saucepan filled with  oil to 180-190 degrees. 4. Prepare the fish: In a shallow dish, mix together the flour, baking powder, and salt. Then add the egg and sparkling water before mixing them into the flour until you reach a smooth consistency. Dip the fish fillets into the flour mixture, then into the egg mixture, and then back into the wet mixture. 5. Drain the chips and pat them dry with paper towels. Working in batches, carefully add the chips (French fries) to the hot oil and fry for 5-6 minutes, or until golden brown. Using a slotted spoon, remove the chips (French fries) from the oil and place them on the wire rack to drain.  6. Carefully add the fish to the hot oil and fry for 3-4 minutes, or until golden brown and cooked through. Remove the fish from the oil and place it on the wire rack to drain. 7. On a toasted  bun, place begin with your tartare sauce, then add your lettuce, chips, fish, pickles, and more tartare sauce. 8. Enjoy!! #newzealand #burgertok
