Welcome to my new cooking series of feeding a family of 5 for under $5 per serve, with simple, quick and easy home cooking. #With prices rising in what feels like EVERYTHING, I know so many people are looking for ways to save, so we are going to cut our spendings down through groceries. First one up in the series is this delicious Chicken Cashew Nut. What's you'll need: 500g of chicken thigh 3 garlic cloves minced 2cm cubed fresh ginger grated 1 brown onion roughly chopped 1 red capsicum roughly chopped 1 green capsicum roughly chopped 1 tbsp of olive oil 1 tbsp of honey 1/4 cup Kecap manis 1/2 cup of chicken stock 1 tbsp of corn flour 1 tbsp rice wine vinegar 1/2 cup of cashew Pepper to taste Serve with rice, around 250g of uncooked, or you can use pre made packet rice but it's much more expensive. Top with sesame seeds and spring onions - Prepare all veggies and onion and set aside. - Cut chicken into bite sized pieces and set aside. - Mix Kecap manis, chicken stock, honey, corn flour, rice wine vinegar, grated ginger and minced garlic in a bowl and set aside. - in a large fry pan on medium heat, add olive oil chicken and perber and cook until chick is white. - Add in the vegetables and saute for 5 minutes. - Add in the sauce and let simmer on low heat until the sauce turns thick. - Add in the cashews and cook for a further 2 minutes.
