Caldarroste (Roasted Chestnuts): it’s a little early, but I had to share one of my favorite Italian holiday traditions. Chestnuts, or castagne as they are known in here in Italy, are roasted & sold on street corners all through the holiday season. I grew up with the ones harvested from the trees my great grandfather brought over from Italy roasting over the fire in my grandparents’ study.  And when we’re in Italy, we buy them whenever we see them, because their smoky sweetness is a treat not to be missed!  Chestnuts are a big deal in Italy, where they have been cultivated for centuries! Both Homer & Virgil mention them & there is evidence of cultivation near Rome beginning as early as 37 BC. Today, there are over 450,000 hectares of chestnuts grown in Italy! When you consider that a mature tree can produce about 20 kg of nuts per year, that’s a lot of chestnuts!🌰  And Italians eat them in all sorts of different ways: roasted as you see here, but also candied, added to soup, stuffed into pasta & sweets like the famous caggionetti of Abruzzo. Chestnuts were even ground to create the first polenta, before corn was introduced into Italy. In fact, the tree is sometimes referred to as “l’albero del pane” or “the tree of bread,” which tells you how integral a role they played in everyday life going back centuries. So why aren’t they a big deal in the United States, where they were once a staple of our diet? Unfortunately for Americans, in the early 1900’s a blight introduced from imported trees killed off between 4 & 5 billion American chestnut trees. Today, 95% of the chestnuts consumed by Americans are imported from Japan, China, or Europe. But there is hope! Hybridized versions of American Chestnut trees cross-bred with Chinese chestnut are proving to be more blight resistant. Until they are more readily available, however, consider trying one of the amazing varieties of Italian chestnuts.
