Vietnamese chicken curry/càri gà……  Not many restaurants will carry this dish.  Let’s make it at home. Everyone has their own recipe and this is mine.  Recipe:  •2-3 lbs free range chicken (cut) •1/3 cup finely chopped lemon grass  •1/4 cup shallots  •2 tablespoons fresh garlic  •3 tablespoons @sunlee.usa curry powder (more if preferred) •2 tablespoon fish sauce (3 crabs brand) •1/2 tablespoon garlic powder  •1/2 tablespoon onion powder  •1 teaspoons ground pepper  •1/2 cup water  Marinate for 2-4 hours. Best overnight    •12 cup water  •400-500 ml coconut cream  •1 tablespoons oil  •1 tablespoons garlic  •1.5 tablespoon salt  •1/2 tablespoon msg (optional) •2 tablespoon chicken mix (bouillon) •1 oz rock sugar (optional 1 tablespoon white sugar) •lemongrass sticks (optional) •taro and sweet potato fry until golden. This will help prevent it from falling apart when simmering.  1•In a pot add oil, garlic and marinated chicken. Cook for 5-8 minutes to lock in the flavor.  2•Add in the water, cover and bring to a full boiling.  3•Uncovered and add in salt, chicken seasoning, rock sugar, taro and potatoes.  3•Continue to cook until taro and sweet potatoes are soft enough (10-12 minutes).  4•Add in the coconut cream. Gently stir and let it bring to a light boiling. Let it simply for about 2-3 minutes. Overcooked the coconut cream will loosen it richness.  •Ps, You can use coconut milk but cream are richer in flavor. You can also use regular chicken(leg, wing, thigh or breast).  •If you’re using stewing chicken.
