20 year HVAC vet here.The explanation i use for this when it comes up is that its not like your car ac settings.Its either cooling, heating or fan.

My return air will be 70 and my supply air will be 61 with it 90° outside on a 4 year old energy star home. Is that good? No problems keeping up

Nope it doesn’t but you will freeze at night and that will mean your house is cooler the next morning so it would be cooler than the day before
