If I'm not mistaking, those are verdolagas. My mom used to cook them with pork in green chile sauce. 😋

Here in the part of Mexico where I live, Sonora to be exact, it’s called ‘verdolaga’ and it’s a very common food sometimes considered a delicacy. 👌🏽
