Golden falafel pitas 🥙    I knew I wanted to make falafel but regular green falafel felt a little bit overdone on my profile. I tend to get inspiration from my family so I called my brother using @T-Mobile to try to get some ~creativity~ out of him. He suggested swapping the usual chickpeas and herbs for golden lentils and harissa in the falafel just to try something different, and it honestly came together way easier than I expected. Same crispy bite, just a new flavor twist. It got me thinking about how some swaps feel intimidating until you actually do them. Like how switching to T Mobile just takes 15 minutes and your life keeps moving. Anyway, here’s your reminder that switching things up doesn’t have to be a whole production—sometimes it’s quick, painless, and actually kinda fun. In a stand mixer add 480ml warm water, 1 tbsp active dry yeast, 2 tbsp honey, 600g all purpose flour, 100g whole wheat flour, 2.5 tsp kosher salt, 2 tbsp olive oil. Mix on medium-low speed for 10-12 minutes. Transfer to oiled bowl, cover with plastic and let proof in the fridge overnight.   2. Punch dough down. Turn out and divide into 12 100g pieces. Roll each into a ball. Cover and let rest 30 minutes.   3. Preheat oven to highest it’ll go with a pizza steel/stone, or just a sheet if that’s all you have (550F is great). Take a ball. Roll to 6 inch circle. Repeat with 2 more. Transfer to the pizza steel quickly. Bake for 3-4 minutes, until puffed and starting to brown. Repeat with remaining pitas.    golden falafel 🧆  1. Soak 12 oz dried golden lentils in water for at least 1 hour.   2. In a food processor, add 3 garlic cloves, 3 tbsp harissa, 2 tsp kosher salt, 1/4 red onion. Pulse to grind. Drain lentils well and add. Pulse until it looks like a meal. Dump into a large bowl. Add 1/2 cup chopped cilantro and 1 tsp baking powder.   3. In a small bowl, combine 1/3 cup flour w enough water to make a batter consistency. Microwave at 10s increments until a soft paste forms. Dump into mixture and combine. Roll into 2tbsp balls.   4. Fry in 350F heated vegetable or olive oil until deep brown. Serve w pita, tomatoes, tahina, cucumber, pickled cabbage, fries, etc.     #pita #falafel #dinnerrecipe #ryannordheimer
